The Olive Journey
From winter until autumn, we care for our trees throughout the year under the supervision of engineers and olive experts to ensure the balance of the trees and the quality of their fruits, until they reach you in their best condition.
Winter: Pruning that protects the future
In winter, we carefully prune the trees to maintain their health and stimulate their growth for coming seasons.
Spring: A bloom that promises a season
With the arrival of spring, With the arrival of spring, the trees bloom and herald a bountiful season, as olive buds begin to open and energy is renewed in the orchard.
Summer: Fruits ripening under the sun
The fruits are exposed to sunlight with natural care, gaining the flavor and quality we gaining the flavor and quality we strive for, and becoming ready for harvest.
Autumn: Careful harvesting and pressing within hours
We anticipate the moment of harvest by tracking signs known to the son of the land, told to us by the trees through the color of their fruits, the weight of their branches, and the smell of the air. After Harvest: Preserving Flavor and Quality
After washing the fruits and isolating them from leaves and impurities, the olives are pressed immediately within hours to preserve:

Season Review and Future Preparation
After the harvest ends, the land rests, but the work does not stop. We review the season, analyze quality, and prepare the land for the next cycle. The oil is stored in stainless steel tanks away from light and oxygen and at a controlled temperature to ensure stability of quality until the packaging stage.
